Smothered Breakfast Burritos + Freezer Meal

Breakfast Burritos are a great make ahead meal that can be customized to your taste, and is a breakfast that everyone loves. Follow this base recipe, choosing your favorite cheeses, breakfast meats. Add up to 1 cup of your favorite add ins. Serve burritos with green chili sauce, salsa or hot sauce.

Smothered Breakfast Burritos

Base Recipe

12 eggs
½ cup milk
2 tsp salt
1 tsp black pepper
1 tbsp butter
3 cups cooked breakfast meat
1 ½ cups shredded cheese
1, 16 oz frozen diced hash browns (optional)
1 tbsp taco seasoning
burrito size flour tortillas
green chili sauce - for topping

How To Cook

In a large bowl, whisk together eggs, milk, salt and pepper and set aside. 

Heat a large non-stick skillet over medium-high heat and add breakfast meat of choice, and cook until cooked through. Remove from pan with a slotted spoon. 

Add potatoes to pan and season with taco seasoning. Cook according to package directions.  Remove from pan once cooked. 

Add 2 tbsp butter to pan, and heat until shimmering. Add eggs to pan, scrambling until cooked through.  Turn off heat and stir in cooked breakfast meat, potatoes (if using) and shredded cheese.

How To Assemble & Serve

Wrap tortillas in a damp paper towel and heat for 10-15 seconds in the microwave. Add 1 cup of filling to the bottom third of tortilla.  Fold in sides, then bottom, and gently roll. 

Pour warmed green chili sauce over the top of each Breakfast Burrito.

How To Freeze

Assemble burritos without fresh vegetables, and let cool completely.  Wrap tightly in plastic wrap and place in a single layer in a labeled ziplock bag.

How To Reheat

To reheat, place plastic wrapped burrito in the microwave and cook for 3-4 minutes. Or, remove plastic wrap and reheat in toaster oven for 10 minutes at 400 degrees.
